Costa Rican Cooking from Casa Rio Blanco Ecolodge at Guapiles

Not an encyclopedia, just some easy and inexpensive favorite recipes of typical dishes of daily cooking, using local ingredients with beans, rice, potatoes and water - easy to prepare and simply delicious.

GUAPILES COCONUT RICE (GUÁPILES ARROZ CON COCO)

Ingredients:
2 tablespoons vegetable oil
2 garlic gloves
2 teaspoons minced fresh ginger
1 1/2 cups white rice
1 cup coconut milk
1 1.2 cups water
salt

Preparation / cooking instructions: Heat the oil in a saucepan. Add the garlic and ginger and cook for about 1 minute. Add the rice until the grains are shiny about 1 minute. Add all other ingredients and bring to boil. Reduce the heat, cover the pan and cook the rice about 20 minutes untill the grains are tender.

GUAPILES SIMPLE BLACK BEAN SOUP (GUÁPILES SOPA NEGRA)

Ingredients:
1 lb. dried black beans
1/2 green pepper, cored & seeded
2 cloves garlic
half spoon salt
1 1/2 liter water
cilantro
(eggs & 1 onion, hot sauce, white rice)

Preparation / cooking instructions: Cook all the ingredients (except the eggs/onion/rice) untill beans are soft. Blend it all in a blender or food processor. (It has to stay liquid, if not put some extra water) Put a little oil in a frying pan with a chopped onion, add some soup. when the soup is hot you can add some more fresh cilantro and 1 or 2 eggs, stir untill the egg(s) are done. Serve with hot chilisauce and white rice on the side.

GUAPILES POTATO SALAD WITH HEARTS OF PALM (GUÁPILES ENSALADA DE PAPAS CON PALMITO)

Ingredients:
1 lb. potatoes, cooked, peeled and cubed
1 8 oz. can Hearts of Palm, cut into rounds
1/2 tablespoon Worcestershire sauce
1 minced onion
2 hard boiled eggs, cubed
3 tablespoons fresh chopped parsley
salt & pepper
1 cup mayonnaise

Preparation / cooking instructions: Mix in a small bowl the mayonnaise, onion and Worcestershire sauce. Salt & pepper to taste. In a larger bowl, mix the cooled cubed potatoes with the palmito and the egg. Add the mayonnaise mixture and mix well. Refrigerate. When serving, sprinkle the chopped parsley on top.

GUAPILES MACADAMIA COCONUT PIE (GUÁPILES PIE DE MACADAMIA Y COCO)

Ingredients:
1 1/2 cups milk
1 cup granulated sugar
1 cup shredded coconut
1/2 cup all purpose flour
1/4 cup chopped roasted Macadamias
4 eggs
1 1/2 teaspoon vanilla extract
3/4 teaspoon baking powder
1/4 teaspoon salt
1/2 stick ( is 1/2 cup) butter, room temperature
(topping: shredded coconut & chopped Macadamias and whipping cream)

Preparation: Preheat the oven to 325 F. Grease a 10 inch pie pan. Blend all ingredients in a blender or a foodprocessor untill well mixed. Pour into the greased pan. Bake untill golden brown and firm to touch about 35 minutes. Sprinkle the toasted coconut and macadamias on top, serve warm pasing the cream seperately.
